Brian - Mixing 2.5 andd 3.5 drives

I am big fan of the show and have fallen behind.  Forgive me if this has been asked before. 

I am building a new FreeNas install and have a question about mixing drives.   I have lost data before due to a failed RAID 5 rebuild.   A second drive failed during the rebuild process with a fresh drive. I am not even thinking for a "stripe of Mirrors",  yet.  
Mirrors seem simple comapred to Raid Z2 etc.

I want to setup a 3 drive deep mirror alone.  For this exercise I am using 7200 RPM 3.5 inch drives.  
I have some 2.5 inch drives available to swap in, in the event a failure.  
I am using the stock case of an HP 6000 Pro machine.  It has the following bay config 
- 2x 5.25 
- 3.5 inch floppy
- 2x internal 3.5. 

newegg has a deal on 4x 2.5 black planes. 

What if I used a black plane to hold two, 2.5 inch 500GB drives, and the FreeNas Host OS drive; then used a 3.5 inch drive for the for the third drive in the mirror. 

since 3.5 is faster, the data reads will almost always come from the 3.5 drive. 

Or will this convoluted setup cause me bigger headaches then not?   I accept that I would added the complication of another "type" of drive to have on hand to swap in, in the event of failure. 
The other thought is pair of 3.5 drives, and the third be 2.5 inch drive.

With all of that.  If I then wanted to have a Stripe-of-mirrors. I would have the additional case capacity to configure it with 
2.5 + 2.5 + 3.5 STRIPED TO 2.5 + 2.5 + 3.5
